The transformation and improvement of olive characteristics was achieved by man, over time, to obtain the tree we now call the cultivated olive tree.
The most important cultivars in Portugal are the Galician, the Carrasquenha the Cordovil the Cobrançosa and Verdeal, among others. The olive tree, given its rusticity, is often on land where no other plants resist.
But when the olive is treated as a real culture productions, and increase in quantity, compared to the extreme, also in quality.
An average olive gives 20 kg of olives, which takes about 5 to 6 kg to produce 1 L of oil.
